Badger | Seared Pork Tenderloin with Apple-Cider Pan Sauce

12 TASTING PORTIONS

Tender pork medallions with a beautifully seared crust, finished with a rich apple-cider reduction. Badger’s savory combination of black pepper, garlic, herbs, and smoked paprika enhances the natural richness of the pork while balancing the sweet acidity of the sauce.

Ingredients

  • 2 pork tenderloins, approximately 1 to 1¼ lb each
  • 3½ to 4 tsp Third Act Farms Badger blend
  • 1½ tbsp cooking oil
  • 1 cup apple cider
  • 1½ tbsp unsalted butter

Instructions

  1. Preheat oven to 400°F.
  2. Pat pork tenderloins completely dry with paper towels.
  3. Season evenly with Badger blend, coating all sides.
  4. Heat oil in a large oven-safe skillet over medium-high heat.
  5. Sear pork on all sides until a golden-brown crust develops.
  6. Transfer skillet to the oven and roast until the pork reaches an internal temperature of 145°F.
  7. Remove pork from the skillet and allow it to rest for 5 to 10 minutes.
  8. Return skillet to medium heat and add apple cider, scraping the browned bits from the bottom of the pan.
  9. Simmer until the cider reduces and begins to thicken.
  10. Remove from heat and whisk in butter to create a smooth, glossy sauce.
  11. Slice pork into medallions and serve approximately two per person, spooning apple-cider sauce over each portion.
