Our Story
Rooted in Farming
We are a small family owned and operated farm in Northern Colorado.
The Beginning
Our Story
We began growing crops on our farm in 2014, working across 60 acres of prairie with a 5,000-square-foot greenhouse that has served as the center of much of our experimentation and production. From the beginning, we have never been afraid to try something different.
One of our earliest projects was greenhouse hydroponic hops. At the time, it was still an unusual approach, and we became the first farm to successfully grow greenhouse hydroponic hops for Colorado’s craft beer scene under the name Hydro Hop Farms. That experience set the tone for everything that followed: learn the crop, understand the environment, solve the problems, and keep improving.
From there, the farm moved into crop research, with work focused on tomatoes and hemp. That chapter eventually evolved into retail hemp production and hemp breeding under the name, Never Winter Botanicals, allowing us to take what we had learned through research and apply it directly to producing high-quality crops for customers.
But through all of those changes, one interest kept pulling us back: culinary herbs and peppers.
They were the crops we loved growing, cooking with, experimenting with, and sharing. Over time, it became clear that they were not just a side interest, they were where we wanted the farm to end up.
That is where the name Third Act Farms comes from.
Our first act was exploration and innovation. Our second was research, hemp production, and breeding. Our third act is about focusing on what we know, what we enjoy, and what feels most connected to the farm itself: growing flavorful herbs and peppers and turning them into thoughtfully made culinary products.
We are still the same small family farm, still growing on the same prairie, still learning every season. The difference now is that we know exactly what we want to grow and why we want to grow it.

Our Approach
How we Grow
Our approach to growing is rooted in a simple idea: agriculture works best when science and nature are used together rather than treated as opposites.
With a college education in Agriculture Technology Management from the University of Arizona and years of experience in agricultural research, we bring a technical understanding of plant nutrition, crop health, and greenhouse production to everything we grow. At the same time, we work with the natural environment instead of constantly trying to control it.
We never use pesticides, and we do not rely on artificial lighting. Our greenhouse protects the crop from some of the harshest parts of the environment, including hail, heavy rain, damaging wind, and animals, while still allowing in the things plants naturally depend on, such as sunlight, fresh air, seasonal changes, and beneficial insects.
Our plants are grown in a living soil blend made entirely from locally sourced Colorado ingredients. We build custom nutrient programs using clean salt based inputs that allow us to provide precise plant nutrition while keeping our production system consistent and free from animal derived ingredients.
Pest management is handled through prevention, observation, and biology. We introduce beneficial insects to help control unwanted pests and maintain balance within the greenhouse rather than relying on conventional pesticide sprays.
Harvest is just as deliberate. Our herbs and peppers are picked by hand at peak maturity, one pepper and one batch of herbs at a time. We do not force the crop to fit an artificial schedule. We work with the seasons, the weather, and the natural rhythm of the plants, harvesting when flavor, aroma, and maturity are where we want them to be.
For us, this is more than a production method. We believe it is one of the most responsible ways to grow because it respects the crop, the environment, and the people who eventually use what we produce. Just as importantly, we believe it results in better food, with herbs that carry stronger aromas, peppers with fuller flavor, and ingredients that reflect the environment in which they were grown.
