Badger | Seared Pork Tenderloin with Apple-Cider Pan Sauce
12 TASTING PORTIONS
Tender pork medallions with a beautifully seared crust, finished with a rich apple-cider reduction. Badger’s savory combination of black pepper, garlic, herbs, and smoked paprika enhances the natural richness of the pork while balancing the sweet acidity of the sauce.

Ingredients
- 2 pork tenderloins, approximately 1 to 1¼ lb each
- 3½ to 4 tsp Third Act Farms Badger blend
- 1½ tbsp cooking oil
- 1 cup apple cider
- 1½ tbsp unsalted butter
Instructions
- Preheat oven to 400°F.
- Pat pork tenderloins completely dry with paper towels.
- Season evenly with Badger blend, coating all sides.
- Heat oil in a large oven-safe skillet over medium-high heat.
- Sear pork on all sides until a golden-brown crust develops.
- Transfer skillet to the oven and roast until the pork reaches an internal temperature of 145°F.
- Remove pork from the skillet and allow it to rest for 5 to 10 minutes.
- Return skillet to medium heat and add apple cider, scraping the browned bits from the bottom of the pan.
- Simmer until the cider reduces and begins to thicken.
- Remove from heat and whisk in butter to create a smooth, glossy sauce.
- Slice pork into medallions and serve approximately two per person, spooning apple-cider sauce over each portion.
